Chicken Nuggets
Ingredients
1 Large chicken breast (or 3 thighs)
1 egg
Flour for dusting
Breadcrumbs to coat

Serves 2-4
Method
- To make fresh breadcrumbs put a slice of bread into a blender and blitz. Place into a shallow bowl.
- Break the egg into a shallow bowl and whisk to mix. Place some flour in another bowl.
- Cut the chicken breast into bite sized nuggets then dust in the flour, dip in the egg and roll in the breadcrumbs until coated. Place on a clean chopping board.
- Heat a little oil in a frying pan and when hot enough to make a bit of bread sizzle, fry the chicken for approx. 3 minutes on each side (depending on thickness of nugget). Alternatively cook in the oven for approximately 15 minutes.
- Serve immediately.
