Banana Loaf
Ingredients
3 ripe bananas, as ripe as possible
100g sugar
100g butter
2 eggs
290g self-raising flour
1/2 tsp of bi-carbonate of soda

Banana Loaf
Perfect recipe for using up very ripe bananas. Why not bake 2, 1 to eat now, 1 for the freezer!

Method
- Preheat oven to 180 degrees C. Prepare your loaf tin by greasing it with butter then lightly sprinkling over some flour (to stop the load sticking).
- Put the bananas on a chopping board or in a bowl and squash completely with a fork, put aside.
- Using an electric whisk, cream together the butter and sugar until pale and smooth.
- Gradually add the egg, always adding a large pinch of flour at every addition and whisk together.
- Sieve in the flour with the spice and bi-carbonate of soda and fold into the egg mixture with a large spoon then add the bananas and blend until smooth. Bake for approx. 45 minutes.
