Fruity Couscous Salad
Ingredients
300g couscous
400ml boiling stock (chicken or vegetable)
3 tbsp dried apricots
5 tbsp raisins
½ tsp. powdered cinnamon
A good pinch of seasoning
1 small handful of fresh coriander, finely chopped (optional)

Serves 4-5
Method
- Chop up the apricots into small pieces and place them in a bowl with the dry couscous, raisins, spices and salt & pepper. Mix well with a spoon.
- Pour the hot stock over the couscous, stir and cover with a plate or cling film and leave for 5 minutes until all of the stock has been absorbed.
