Chicken Nuggets

  • 1 Large chicken breast (or 3 thighs)

  • 1 egg

  • Flour for dusting

  • Breadcrumbs to coat

Method
1.
To make fresh breadcrumbs put a slice of bread into a blender and blitz. Place into a shallow bowl.

Break the egg into a shallow bowl and whisk to mix. Place some flour in another bowl.

Cut the chicken breast into bite sized nuggets then dust in the flour, dip in the egg and roll in the breadcrumbs until coated. Place on a clean chopping board.
4.
Heat a little oil in a frying pan and when hot enough to make a bit of bread sizzle, fry the chicken for approx. 3 minutes on each side (depending on thickness of nugget). Alternatively cook in the oven for approximately 15 minutes.
5.
Serve immediately.
